Sautéed Chicken with Sauce
This
is one of those meals I used to make all the time when the kiddies were
little. It has all the ingredients to
make it kid friendly. It is easy, quick,
and tasty and can me made while they are busy cleaning up their toys or putting
away their homework. While you can use
bbq sauce for this dish my favorite is the Heinz 57. Ketchup is good too.
If
you had decided to bone and skin the chicken breast yourself, discard the skin,
cook the bones with a carrot sliced diagonally, sliced celery, chopped onion, a
bay leaf, parsley salt and pepper. Boil
on high for 5 mins and then simmer until rest of your dinner is done. Add some pasta into the liquid once you remove
the bones. Don’t forget to remove any
meat left on the bones to add to your soup.
If
you don’t have carrots or frozen peas, use what ever you have on hand. Steamed green beans or Broccoli on the side
works great too.
Cooked
broad noodles or rice, enough for 4 people
Cook
Spray
1
Tablespoon Olive Oil
2
skinless boneless chicken breast halves, cut in ¼” slices and then cut in 1”
pieces
1
½ cups finely chopped onion
2
minced cloves of garlic
2
carrots sliced 1/8” thick diagonally and cut down vertically
½
- 1 cup of Heinz 57 sauce or Ketchup or Barbeque Sauce of your choice
1
cup frozen peas
¼
cup chopped parsley
While
the pasta or rice cooks.
Sauté
the onion and garlic in a hot skillet covered with cook spray and olive oil.
Add
the carrots and stir well.
Add
the chicken and sauté while stirring till well covered with the oil for about 3
– 5 mins.
Add
the sauce of your choice and cook another 2 mins while stirring well, now add
the frozen peas and cover the skillet and cook till the peas turn bright green
3 mins or so.
Sprinkle
with parsley and Dinner is DONE!
Serves
4. Add a salad and a soup to stretch it
to 6 or just because you like salad and soup.
Don’t forget a desert. All good
kiddies deserve an ice cream cone!
